There has to be a million ways to make this, but this is how I made mine this weekend...|
Bruschetta with cheese
Fresh herbs (basil is great)
Cheese of choice
Slice the bread into fairly thick slices. Rub a clove of garlic (or spread roasted garlic all over the bread. YUM!!) over the bread. Brush or drizzle on olive oil to cover the bread. Add fresh basil, chopped tomatoes and cheese. Place the bread on a baking sheet and put in the oven until the bread is crispy and the cheese is golden.
Enjoy! (goes well with the spicy sauce posted right before this too)
