|Falafel with orangy veggies and yoghurt sauce

I actually forgot I had this cooking journal, but when I stumbled upon it the other day, I decided to post some recent experiments. Hope you enjoy this - it was A-M-A-Z-I-N-G!!!|
Falafel with orangy veggies and yoghurt sauce
I cheated with the falafel, and just used ones from the store - still yummy!
2 spring onions/leeks
1 handful sugar snap peas
1/2 red bell pepper
about 1 dl orange juice
Sauté all the veggies in a bit of ghee/oil for a few minutes. Add orange juice and let it all cook while you heat the falafel. The orange juice should mostly be gone by the time they are done. I like my veggies slightly crunchy, so I didn't cook them for all that long.
flat leaf parsley
sweet red chili sauce
For the yoghurt sauce, mix plain yoghurt, lots of fresh parsley (flat leaf) all chopped up and some sweet red chili sauce. Season to taste.
