Tofu and veggies a'la HOT!
1/3 head broccoli, including stems
1/2 block tofu
1 red chili (mmm the heat ;) hehe)
2 tsp cumin & coriander paste (this stuff is GREAT!!)
peanut or vegetable oil
1-2 tsp vegetable broth (powder)
coriander (the spice= ground coriander seeds)
Heat up oil in a skillet. Add chopped onion and sauté until transluscent. Add tofu, chopped into small cubes. Let tofu brown a little before adding the chopped carrots and broccoli. Add the cumin/coriander paste, vegetable bullion and some water so the carrots and broccoli will cook faster. Add chili, with or without seeds (depends on how hot you like it). Let simmer until the carrots and broccoli have reached the desired consistency. I like mine slightly crunchy. Salt and pepper and add some extra paste to taste. I love cumin and ground coriander, so I usually add some more. Fresh coriander leaves (cilantro) are also great with this!
